Do you think a certain herb tastes like soap? There's a scientific reason for that.

Usually it's kids who don't like the taste of cilantro. It packs quite a wollop for being such a mild looking little herb and those first few tastes can be brutal. I remember the first time I tried it, I thought it tasted like perfume. And my mother went on and on about how much she loved it. Inside I was thinking that will never be me. And, of course, it is. I love it!! I just bought some today and I put it on just about everything. Except ice cream, because Ew.

If you never got used to the taste and always thought it tastes like soap, it's not your fault. It's your genes. Scientists figured out that people with a particular gene describe cilantro as tasting "soapy." So if your friends are still teasing you about how unsophisticated your palate is now you can point them to the 2012 study in the scientific journal Flavour. And you're not alone in your dislike of cilantro. Barefoot Contessa, Ina Garten thinks it tastes like soap and so did Julia Child. And chefs don't get fancier than that!
