It might sound weird but the idea is to sub in extra virgin olive oil for whatever other oil you would normally use. The health benefits of consuming olive oil (like having and retaining a better memory as you age-reason #1) are well documented so you can indulge without the guilt.

And if you're wondering, Is the cake is going to taste like olive oil, it does NOT. It's delicious! (reason #2) And moist! And this cake is gluten free (reason #3) so it's easier for those with sensitive tummies to digest.

Instead of a round pan I used a loaf pan, so feel free to make it you're own. It also makes great muffins.
