My dairy-free secret ingredient that takes any salad to the next level!

First, you should know I've never been into salads. At all. Ever. But give me a medium rare cheeseburger and you had me at 'hello.'

Except lately I've wanted to feel better after eating. You know lighter and a lot less, 'Ugh, I'm too full to move!' So, I've reconsidered salads, particularly for lunch and now I'm pleased to say my salad game is strong.

Romaine, arugula, spinach, radicchio, endive --- I mean there's a lot of options to choose from and mixing and matching is even more fun. Olives, radishes, artichokes, fresh figs, and, of course, cheese. Do you adore cheese like I do? Creamy goat cheese, gouda, gorgonzola, feta and especially grilled halloumi.

Cheese makes the world a better place. But I eat too much of it and I need it on my cheeseburger. So how does one make a killer salad without cheese?

Avocado is a delicious, healthy choice and indulgent-feeling option, but there's an even better choice. Guacomole. Yes! Whip up a little guac and put a big clump on your salad of choice. Makes that salad more fun to eat and when you're finished you'll feel so satisfied and nowhere near over-stuffed.

Also, I don't use store bought salad dressing. There's really no point. They're full of stull you don't need and if you're lazy like me, it's just one less thing to have to remember to buy. Instead, drench those greens with extra-virgin olive oil (the real deal), don't be stingy, and squeeze on some fresh lemon juice. Add the salt and pepper, toss away and you'll be amazed at how good something so simple is. Your belly with thank you.

You'll want to eat one every day and then the next time you bite into that juicy cheeseburger, or pepporoni pizza with extra cheese you'll feel better knowing your diet isn't a complete mess.
